Pacific’s Rice Coarse Flour is a very popular flour that is used throughout the baking and restaurant industry. Rice Flour is use for those that do not want any gluten in their meals. It has been historically been use in cereals, crackers, chips, snacks, and coating batters to provide different textures. This Short/Medium grain rice flour is used as the Long grain rice flour , but it just provides a lighter texture and a little more expansion when its puffed. It is more resistant to starch retrogradation than the long grain and therefore is used as a thickener in some high moisture applications.
